- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 1 lb fettuccine or pasta of choice
- 4 tablespoons salted butter
- 6 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth, low-sodium
- ½ cup freshly grated Parmesan cheese
- 1 teaspoon smoked paprika
- ¼ teaspoon red pepper flakes, optional
- Fresh parsley, chopped for garnish
- Extra Parmesan for serving
Instructions
- Cut chicken breasts into uniform 1-inch pieces and season with 2 teaspoons smoked paprika, garlic powder, salt, and black pepper. Toss to coat evenly.
- Bring a large pot of salted water to boil. Cook fettuccine according to package directions minus 1 minute. Reserve 1 cup pasta water before draining.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken in a single layer and cook 3-4 minutes per side until golden brown and cooked through to 165°F. Transfer to a plate.
- Reduce heat to medium and add butter to the same skillet. Once melted, add minced garlic and cook 45 seconds to 1 minute until fragrant, stirring constantly.
- Pour in chicken broth and heavy cream. Add 1 teaspoon smoked paprika and red pepper flakes. Simmer 5-7 minutes until slightly thickened.
- Reduce heat to low and stir in Parmesan cheese until melted and smooth.
- Return chicken and any juices to the skillet. Add drained pasta and toss with tongs for 1-2 minutes, coating everything in sauce. Add reserved pasta water as needed to reach desired consistency.
- Taste and adjust seasoning. Garnish with fresh parsley and extra Parmesan. Serve immediately.
