- 2 medium zucchini, cut into 1-inch chunks (about 1 lb.)
- 1 large eggplant, cut into 1-inch cubes (about 1.5 lbs.)
- 2 red bell peppers, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 large red onion, cut into wedges
- 1 pint cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/3 cup extra virgin olive oil (80 ml)
- 2 tablespoons fresh lemon juice (30 ml)
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup crumbled feta cheese (75g)
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Preheat your oven to 425°F (220°C) and position the rack in the center. Line a large rimmed baking sheet with parchment paper if desired.
- Wash and dry all vegetables. Cut zucchini into 1-inch chunks, cube eggplant into 1-inch pieces, slice bell peppers into 1-inch squares, cut red onion into thick wedges, halve cherry tomatoes, and mince garlic.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, basil, salt, black pepper, and red pepper flakes until well combined.
- Place all cut vegetables except cherry tomatoes in a large mixing bowl. Pour seasoning mixture over vegetables and toss thoroughly to coat. Transfer to prepared baking sheet in a single layer.
- Roast for 15 minutes, then remove from oven, stir vegetables, and add halved cherry tomatoes. Return to oven and roast for additional 15 minutes until vegetables are golden and caramelized.
- Remove from oven and let rest 5 minutes. Transfer to serving platter and top with crumbled feta cheese and fresh parsley. Serve with lemon wedges.
