  • 1.5 lbs ground chicken
  • 1/3 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 3 cloves garlic, minced finely
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1/4 cup fresh cilantro, chopped finely
  • 2 green onions, sliced thinly
  • 1 tablespoon lime zest
  • 1 teaspoon coconut sugar
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon coconut oil, melted

Instructions

  1. Preheat oven to 400°F and line a large baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, egg, fish sauce, curry paste, coconut sugar, salt, pepper, garlic, ginger, lime zest, cilantro, green onions, and breadcrumbs. Mix gently until just combined.
  3. Form mixture into 20-24 meatballs using a cookie scoop or your hands, placing them 1 inch apart on the prepared baking sheet.
  4. Brush meatballs lightly with melted coconut oil.
  5. Bake for 18-22 minutes until golden brown and internal temperature reaches 165°F.
  6. Let rest for 3-5 minutes before serving with your favorite dipping sauce.
