Cheddar and Herb Soda Bread

Fresh out of the oven in under an hour, this cheesy, herb-packed loaf needs no yeast and barely any effort. One bite of that crispy crust and tender, savory center will make it your new go-to bread recipe.

 

Ingredients

  • 4 cups (500g) all-purpose flour, plus extra for dusting
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1¾ cups (420ml) buttermilk, cold
  • 1 large egg
  • 2 cups (225g) sharp cheddar cheese, grated (reserve ¼ cup for topping)
  • 3 tablespoons fresh herbs, finely chopped (combination of rosemary, thyme, and chives)
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Place it in the oven as it heats.
  2. In a large mixing bowl, whisk together the flour, baking soda, salt, and sugar. Make a well in the center.
  3. In a separate bowl, whisk together the cold buttermilk and egg until well combined.
  4. Add the grated cheddar cheese (reserving ¼ cup for topping) and chopped fresh herbs to the dry ingredients. Toss gently to distribute.
  5. Pour the buttermilk mixture into the well, then drizzle the melted butter over top. Stir quickly just until a shaggy dough forms.
  6. Turn the dough onto a lightly floured surface. With floured hands, gently pat and fold the dough 3-4 times. Shape into a round loaf about 7-8 inches in diameter.
  7. Using a sharp knife, cut a deep cross about ½ inch deep across the top of the loaf. Sprinkle the reserved cheddar cheese over the top.
  8. Transfer the loaf to the preheated baking sheet. Bake for 15 minutes at 425°F, then reduce temperature to 375°F (190°C) and bake for 25-30 minutes until deeply golden brown.
  9. Transfer the bread to a wire rack and let cool for at least 15-20 minutes before slicing.
